Baked Bananas - U.S. Virgin Islands

Ingredients

8 bananas
1/2 cup brown sugar
1 cup orange juice
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 cup Virgin Island rum
2 tablespoons butter


Peel bananas. Cut in half lengthwise. Place bananas in baking dish. Combine brown sugar, orange juice, spices and rum in a saucepan. Heat and pour over bananas. Dot with butter. Bake at 450ºF for 10 to 15 minutes until tender. Baste with juice. Sprinkle a little more more rum on top before serving.


Note:


In the Virgin Islands they are used to accompany meat or poultry or eaten as a dessert. We prefer to eat them as a dessert with a scoop of coconut ice cream.

This recipe comes from the beautiful U.S. Virgin Islands (America's Paradise in the Caribbean). What is now the U.S. Virgin Islands were first a colony of France, until they sold them to the Danes in 1733 and they stayed a Danish colony until 1917, when the Danes sold them to the USA for 25 million dollars. Magens Bay on the island of St. Thomas has been rated for many years as one of the ten best beaches in the world by readers of Condé Naste magazine.
