Baked Beet Salad
4 beets washed
2 lemon juice
1/4 of olive oil
1 white onion chopped
5 parsley sprigs chopped.
salt to taste
8 to 12 butter lettuce leaves to be used as a bed of lettuce
Preheat oven to 400 degrees.
Wrap each beet with aluminum foil and bake in oven for 1 hour.
Let beets cool, peel, dice and add in bowl.
In small bowl mix lemom juice, oil, onion, parsley and salt then add to bowl of beets and toss everything.
Serve on bed of lettuce leaves.
