Baked Beet Salad
4 beets washed
2 lemon juice
1/4 of olive oil
1 white onion chopped
5 parsley sprigs chopped.
salt to taste
8 to 12 butter lettuce leaves to be used as a bed of lettuce
heat oven 400 degrees
Wrap each beet with aluminum foil and bake in oven for 1 hour.
Let beets cool then peel and dice.
Add lemon juice, olive oil, onions, parsley and salt then toss.
Serve on bed of lettuce leaves.
