4 Beets. Washed. Cut off stems and top. Put in pie pan (or like minded pan) and put juice of One seriously juicy lime in the pan. Put the beets on top, bake at 350 for an hour. Check if the fork goes right in. if not, turn over. Add a little water the lime juice will have hardened. Bake for another hour.

Slice it up and freaking EAT. awesome. Even if you hate beets. I promise.
