Baked Brie with Blueberry Sauce
1 cup fresh blueberries
1/2 cup brown sugar
1 ½ tbs cornstarch
2 Tbs shallots, chopped finely
2 Tbs cider vinegar
1 stick cinnamon
1/8 tsp salt
8 oz brie round
1. Combine all ingredients (except brie) in a large saucepan. Bring to a boil over medium heat, and cook 2 minutes. Remove cinnamon stick. Cover and chill blueberry mixture for about 1 ½ hours.
2. Preheat oven to 350 degrees F.
3. Place brie round on baking sheet. Bake 15 minutes, or until cheese is soft. Carefully move hot brie to a serving plate, and top with chilled blueberry mixture.
Serve with crackers or bread slices
