Why I Love This Recipe


Ingredients You'll Need

Crust:
1/2 cup graham cracker crumbs
1 tablespoon sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
Filling:
5 eggs
2 pkgs. (8 oz. each) cream cheese, softened
1 cup sour cream
2 tablespoons flour
1 teaspoon vanilla
1 cup sugar
Glaze:
1 can (16 oz.) red tart pitted cherries
1/2 cup sugar
2 tablespoons cornstarch
1 drop red food coloring


Directions

Crust: Preheat oven to 275ºF. Butter bottom of 9-1/2-inch springform pan. Mix crust ingredients together and place in prepared springform pan. Set aside.


Filling: Separate eggs and beat yolks until lemon colored then add sugar gradually. Cut soft cream cheese into tiny chunks and add to egg mixture. Beat until smooth. Add sour cream, flour and vanilla. Beat again until smooth. Beat egg whites until stiff but not dry. Gently fold egg whites into cheese mixture. Pour into prepared pan. Bake 70 minutes. Turn off oven and leave in oven 1 hour longer without opening oven door. Remove from oven and cool completely.


Glaze: Drain the cherries and reserve the liquid. Add enough water to juice to equal 1 cup. Combine with sugar and corn starch in small saucepan. Cook until mixture thickens, stirring constantly. Boil 1 minute. Remove from heat. Stir in cherries and a dash of food coloring. When cooled, spread over cake.
