  • 3 pounds boned and skinned chicken breast halves
  • 8 ounces bread crumbs
  • 1/2 cup parmesan cheese, freshly grated
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • egg whites, for dipping


  • Preheat oven to 350 degrees. Cut chicken into cubes or strips. Mix together bread crumbs, Parmesan, salt, onion powder. Dip chicken in egg whites; roll in bread crumb mixture and place on ungreased cookie sheets.
  • Refrigerate until ready to cook. Bake 15-20 minutes.


Here's my answer to frozen or fastfood chicken nuggets. A few years ago I babysat my niece and nephew for a weekend and we served these. They disappeared rapidly and their parents upon returning home asked for the recipe as the kids normally refused to eat chicken dishes.
