BAKED CHICKEN AND HERBED RICE

Ingredients

  • 1 Lb of Chicken Breast (we used pre-cut chicken tenders for easy serving)
  • 1/4 Cup of Olive Oil
  • 1/4 Cup of White Cooking Wine (You could also use red if you like)
  • 2 Cups of Brown Rice, Uncooked (You could also use white)
  • 1 Tbsp of Italian Seasoning
  • 1 3/4 Cups of Water

Directions

  • You will need:
  • 1 medium sized pot, big enough to cook the rice
  • 2 Quart baking dish
  • Measuring cups and spoons
  • Small Bowl
  • Tongs
  • Mixing spoon
  • 1. Pre-Heat oven to 350*f
  • 2. In the small bowl mix the Olive Oil and White Cooking Wine together until well mixed and creamy in texture
  • 3. Place chicken in baking dish (use tongs to prevent Salmonella), pour Olive Oil/Wine mix over the chicken, making sure to coat all the chicken. Place chicken in pre-heated oven and bake uncovered for 35-40 minutes, until internal temperature reaches 165*f
  • 4. Put the water in the pot and bring to a boil. Add rice and Italian Seasoning, reduce heat to low and simmer covered for 5 minutes, than remove from heat, stir, re-cover and let stand for 5 minutes or until the water is fully absorbed than fluff with a fork
  • 5. To serve put rice and chicken on each plate and spoon cooking liquid from chicken over both.

Notes

Little Chef has a cold and her favorite foods are Chicken and Rice, so we made a nice meal together with her favorite things. Goes well with Birch Beer Soda as a treat!
