BAKED CHICKEN WITH BROCCOLI SALAD + GARLIC TOAST

Ingredients

  • Broccoli
  • Vinegar
  • Garlic
  • Feta Cheese
  • Salt/Pepper
  • Prosciutto or Bacon
  • Chicken Breast or Thigh
  • Olive Oil
  • Parsley
  • Butter
  • Garlic
  • Baggette

Directions

  • Chop brocolli, vinegar, garlic, feta cheese, salt/pepper and olive oil in a food processor
  • Season chicken with salt/pepper
  • Wrap the chicken in prosciutto or bacon
  • Bake the chicken for ~20 min at 425 degree.
  • Add broccoli salad to the top of the chicken before serving
  • Mix parsley, room temperature butter and salt/pepper together to make garlic butter
  • Cut baggete diagonally and smear with butter
  • Toast bread until crunchy
