Baked Grits With Cheese And Scallions
8 cups of water
2 cups quick-cooking grits
3 cups sharp cheddar cheese
1 cup low fat (2%) milk
1 teaspoon garlic salt
1/2 teaspoon white pepper
8 scallions, chopped, divided
In a large pan, bring water to a boil. Add grits; Cook and stir over medium heat for 5 minutes or until thickened. Remove from the heat.
In a large bowl, whisk eggs. Stir 1 cup of hot grits into eggs; return to all to the pan, stirring constantly. Stir in the cheese, milk, white pepper, garlic salt and half of the onions.
Transfer in a 4 quart baking dish coated with cooking spray. Bake uncovered at 350ºF for 35 minutes or until golden brown. Sprinkle with remaining onions. Serves 16.
