Baked Pesto Chicken
1 lb boneless chicken tenders
3.5 oz basil pesto
3 Roma tomatoes, sliced
8 oz fresh mozzarella, sliced
dash each of salt, black pepper, and Italian seasoning
Parmesan cheese, shredded
Preheat oven to 400°. Lightly coat a baking dish with Pam. Place the chicken tenders in the dish and spoon basil pesto on each chicken tender. Spread to cat the top of the chicken pieces. Place tomato slices on top and sprinkle with salt and pepper.
Place the mozzarella slices on top of the tomatoes and sprinkle with Italian seasoning and Parmesan.
Bake for 40 minutes. Remove from the oven and enjoy!

This is a recipe I made recently and it is very good. If you like Caprese salad, this is just like it, only with chicken!
