- 6 ripe plantains
- 11/2 cup sugar
- 3 tablespoons butter
- 1 pint grape juice
- 1 stick cinnamon
- salt to taste
- Peel plantains and cut crosswise. Place pieces in a buttered baking dish with sugar and butter, grape juice, cinnamon and salt. Bake in a 350 F oven for 40 minutes or until plantains are soft and brown. Serve hot.
NotesThe U.S.Virgin Islands used to be a colony of Denmark, until Denmark sold it to the USA in 1918. Our British friends would feel very at home there, since the U.S. Virgin Islands is the only place in the USA where they drive on the left hand side of the road.
