Baked Pumpkin Ginger Oatmeal
¼ C. Pumpkin puree (from a can)
2 T. Lowfat cottage cheese
1 C. Water
½ t. Vanilla extract
½ C. Old-fashioned oats
¼ t. Baking powder
Dash sea salt
1 t. Cinnamon
1/8 t. Allspice
1 piece crystallized ginger, crushed
Preheat oven to 350°.
Combine all wet ingredients in a large mixing bowl.
Place dry ingredients, except ginger, into a small bowl. Mix well.
Mix dry ingredients with wet. Stir in crystallized ginger.
Bake in an oven-proof dish for 30 minutes. Drizzle with 100% pure maple syrup if desired.
