Baldpate Inn Cornbread
1 stick butter, softened
3/4 c sugar
2 c creamed corn
1/2 c Monterey Jack cheese, shredded
1/2 c cheddar cheese, shredded
1 c flour
1 c yellow cornmeal
4 t baking powder
1/4 t salt
Preheat oven to 350.
Using electric mixer, cream butter and sugar; then add eggs one at a time, mixing well after each addition.
Gradually mix in creamed corn and cheese.
Combine dry ingredients; add to wet mixture. Spread evenly in greased 9x13" pan.
Place in oven and immediately reduce temperature to 300. Bake 1 hour. Serve warm.
Note: Original recipe called for 2 sticks butter and one cup of sugar. Those amounts were reduced with no change in the flavor.
