BANANA, FRUIT OAT BARS

Ingredients

  • 3 large ripe bananas
  • 3 Cups traditional oats (we used large flakes)
  • 1/2 Cup chopped dried fruit
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoon vanilla extract

Directions

  • 1. Preheat oven to 325F (160C)
  • 2. Grease 9x13 inch cake pan and line with parchment paper, cover about 1 inch up the sides of the pan
  • 3. Mash bananas until smooth
  • 4. Add fruit, cinnamon, and vanilla and stir well
  • 5. Spoon into prepared pan and press evenly into pan
  • 6. Bake for 30-35 minutes or until golden
  • 7. Cool completely then cut into small bars
  • *You can experiment and try different things like chocolate chips instead of dried fruit.
