Banana Blueberry Muffins
2 cups unbleached flour
1 tbsp baking powder
1 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp salt
3/4 cup sugar
2/3 cup soy milk
1.5 medium sized bananas
1/4 cup all natural (no sugar added) applesauce
2 tbsp pure maple syrup
1tsp vanilla extract
3/4 cup (or more if you wish) fresh or frozen blueberries
Preheat oven to 375-prepare 12 muffin tin with paper liners or non-stick spray
stir together flour, baking powder, cinnamon, ginger, salt, and sugar in large bowl. set aside.
in a blender, combine soy milk, bananas, applesauce, maple syrup, and vanilla-blend until smooth.
slowly stir liquid mixture and blueberries into the dry mixture just until everything is mixed.
spoon into muffin tin. bake for 20-25 minutes.
let cool completely before removing
