  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cup of flour


  • Mash and mix bananas and butter. Mix in sugar, egg, vanilla, baking soda, salt. Add flour last. Now for the extras. Add about half cup or a full cup of chocolate chips and about a cup or more of mini marshmallows (in hindsight I think you can even add those little caramel squares to the mixture...yum!). Bake in a greased pan at 350C for about an hour or until inserted toothpick comes out dry.
  • I know the marshmallows sound strange but several people sampled the bread and they said the marshmallows were an awesome addition :D
