  • 1 ¾ cups sifted flour
  • ¾ tsp soda
  • 1 ¼ tsp. cream of tartar
  • ¼ tsp salt
  • 1/3 cup shortening
  • 2/3 cup sugar
  • 2 eggs, well-beaten
  • 1 cup mashed banana (2-3 bananas)


  • Sift flour, soda, cream of tartar, and salt together. Rub shortening to creamy consistency with back of a spoon. Stir the sugar, a few tablespoons at a time into shortening and continue stirring after each addition, until light and fluffy. Add eggs and beat well. Add flour mixture alternately with banana, a small amount at a time. Beat after each addition until smooth. Pour into well-greased loaf pan (8 ½ x 4 ½ x 3 inches) and bake at 350 degrees, or until done. May be doubled.
