INGREDIENTS

  • Cooking Time: 60
  • Preparation Time: 15
  • 2 Tbsp melted butter
  • 3-4 ripe bananas, well mashed
  • 2 eggs, beated till light
  • 2 c. self-rising flour, sifted
  • 1/2 c. honey

DIRECTIONS

Mix butter, bananas, and eggs together; add honey, then flour. Stir well. Pour into 9x5 inch greased and floured pan; bake in preheated 350 oven for 1 hour.

I needed a recipe that would stay good long enough for me to mail it to my husband overseas. I found this one with honey in it. When he started a new job I used all my frozen bananas that I had from that year and made banana bread for the guys at work for Christmas. For 15 years I have been baking banana bread for the guys at work and freezing bananas during the year when I have some left that are browning or find them on sale. I bake about 30 loaves a year.
