Variations and suggestions:

Banana muffins can be made from this recipe as well. Muffins are easy to eat on the go and kids who take a while to get going in the morning, can easily grab one on the way to school.

•Preheat oven to 400°F (200°C).

•Prepare the recipe the same as you would for the banana bread.

•Line a muffin tin with paper liners or lightly spray with nonstick spray. Spoon in the muffin mix. Fill each muffin cup about 2/3 of the way up.

•When muffins are finished baking, remove from muffin tin and cool them on a wire rack.

•Enjoy your berry tasty muffins!

•Bake for about 20 minutes.

If you're nutty for nuts, add chopped walnuts during Step 6.

Notes

Bananas are packed with potassium and iron and are great for boosting low blood sugar and energy levels. But not all kids are mad about them. So how about disguising things like banana in baked items like muffins or banana bread? They can be baked and frozen at home and kids will love to help.
