Why I Love This Recipe
Everyone seems to gather in the kitchen when this banana bread comes out of the oven. If you can spare a couple slices, freeze them for a quick breakfast novelty. It will stay fresh 2-3 months in the freezer. This recipe does very well as muffins.
Ingredients You'll Need
2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 cup butter
1 pinch of salt (if using unsalted butter)
1 cup sugar
4 Tbsp milk
3 bananas, mashed (4, if small)
Mix flour, baking powder, and baking soda.
Cream butter until fluffy and add sugar gradually.
Beat in each egg till well blended.
Mix in the mashed bananas and the milk to the wet ingredients.
Fold in the flour mixture into the batter.
Bake in a greased loaf pan at 400°F for 35-40 minutes.
