Banana-Carrot Cake

Ingredients

1 cup sugar
1 cup mashed ripe banana
2/3 cup oil
2 eggs
1 ½ cups all-purpose flour
2 tsp. baking powder
1 tsp. salt
½ tsp. soda
1 tsp. cinnamon
¼ to ½ tsp. cloves
1 cup quick or old-fashoined oats, uncooked
1 cup shredded carrot
1/3 cup chopped nuts


Combine sugar, banana, and oil.


Add eggs, one at a time, beating well after each.


Stir in combined flour, baking powder, salt, soda, and spices.


Add oats and carrots and mix well.


Spread into great 9x9 pan and sprinkle with nuts.


Bake in preheated 350° over for about 40 minutes or until wooden pick inserted in center comes out clean.
