Banana Cheesecake with Chocolate Macadamia Crust

Why I Love This Recipe


Ingredients You'll Need

Crust:
1 cup chocolate wafer crumbs - about 20 cookies
1/2 cup macadamia nuts, toasted lightly, cooled
1/4 cup sugar
5 tablespoons butter, melted
Filling:
2 pkgs. (8 oz. each) cream cheese, softened
1/2 cup sugar
1-1/2 cups mashed ripe bananas; about 2 large
1 teaspoon vanilla
4 large eggs
Topping:
1-1/2 cups sour cream
1 tablespoon sugar
1 teaspoon vanilla


Directions

Oven at 350ºF. Butter lightly a 9-inch springform pan.


Crust: Combine the wafers, nuts and sugar, stir in the butter and press into the bottom of the pan.


Filling: Beat the cream cheese, sugar, banana, and the vanilla. Add the eggs one at a time. Blend till combined well. Pour into the crust and bake for 45 minutes.


Topping: Combine the sour cream, sugar and vanilla. Mix well. Spread over the cake evenly and bake for 5 minutes more. When done transfer to a rack and cool, then chill, covered overnight.


Garnish with 1/4 cup chopped macadamia nuts and 2 tablespoons shaved bittersweet chocolate.
