Banana Cheesecake

Serves 8 | Prep Time | Cook Time

Ingredients

Crust:
1-1/3 cups vanilla wafer crumbs
1/3 cup melted butter
Filling:
1 cup mashed banana
2 pkgs. (8 oz. each) cream cheese, softened
2 cups sour cream
1 cup sugar
1 tablespoon cornstarch
3 tablespoons lemon juice
1-1/2 teaspoons vanilla
3 eggs
1/2 teaspoon salt


Crust: Mix ingredients thoroughly. Spread onto bottom of 9-inch springform pan. Bake for 10 minutes at 350ºF.



Filling: Mix all ingredients thoroughly. Pour into baked crust. Bake at 350ºF for one hour. After the hour shut off the oven and leave in for another hour. To keep cake moist, bake with a pan of water. Top with


whipped cream.
