Banana Fruit Cake
1½ c. sifted flour
1½ c. sugar
1 tsp. baking powder
1 tsp. salt
2 (7¼ oz.) pkg. dates
2 (20 oz.) cans pineapple chunks, drained
1½ c. raisins
2 (16 oz.) jars maraschino cherries, drained
4 c. pecans
½ c. orange juice
Grease 2 loaf pans and line with greased brown paper.
Sift flour, sugar, baking powder and salt into large bowl.
Add fruit and nuts. Toss.
Beat eggs and juice; pour over fruit mixture and combine.
Turn mixture into pans and pack lightly.
Bake 300° for 1¾ hours or until toothpick inserted in center comes out clean.
