- 6 very ripe plantains
- 8 Tablespoons butter
- 1/8 teaspoon salt
- Peel and cut the plantains lengthwise.
- In a medium skillet melt the butter.
- Fry the plantains until golden brown; add the salt.
- Keep plantain slices warm in a 200ºF oven until serving time.

NotesThe Netherlands Antilles are not the only place in the Caribbean where you can taste fried plantaines, after all fried plantains is the staple food of most islands in the Caribbean, but each island prepares it a bit different.
