BANANA MUFFINS WITH CREAM CHEESE ICING

Ingredients

  • Dry:
  • 1 1/2 c. whole wheat flour
  • 1/2 cup sugar
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cinnamon
  • Wet:
  • 1 1/2 cup mashed bananas
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp. vanilla
  • Icing:
  • 1 block low fat cream cheese
  • 1 cup powdered sugar or Splenda
  • 1 Tbls. lemon zest
  • milk

Directions

  • Sift together in a large bowl.
  • 1 1/2 cup mashed bananas
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp. vanilla
  • Make a hole in flour mixture and pour wet ingredients into center. Fold in wet ingredients until just combined.
  • Divide batter evenly into lined muffin tin and bake at 350 for about 15 minutes. Allow to cool completely before icing.
  • Icing:
  • 1 block low fat cream cheese
  • 1 cup powdered sugar or Splenda
  • 1 Tbls. lemon zest
  • milk
  • Blend cream cheese, sugar, and zest until combined. Pour in milk a Tbls. at a time until desired consistency is reached. Icing should be glossy and thick.

Notes

This super simple recipe can be made with sugar substitute, too! I also use other fruits, like strawberries or blueberries, to spice it up. I whip these up in about 10 minutes, and they freeze well, too!
