INGREDIENTS

  • Servings: 12
  • Dry:
  • 1 1/2 c. whole wheat flour
  • 1/2 cup sugar
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cinnamon
  • Wet:
  • 1 1/2 cup mashed bananas
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp. vanilla
  • Icing:
  • 1 block low fat cream cheese
  • 1 cup powdered sugar or Splenda
  • 1 Tbls. lemon zest
  • milk

DIRECTIONS

Sift together in a large bowl.



1 1/2 cup mashed bananas


1/2 cup vegetable oil


2 large eggs


1 tsp. vanilla



Make a hole in flour mixture and pour wet ingredients into center. Fold in wet ingredients until just combined.


Divide batter evenly into lined muffin tin and bake at 350 for about 15 minutes. Allow to cool completely before icing.



Icing:


1 block low fat cream cheese


1 cup powdered sugar or Splenda


1 Tbls. lemon zest


milk



Blend cream cheese, sugar, and zest until combined. Pour in milk a Tbls. at a time until desired consistency is reached. Icing should be glossy and thick.
