  • 1/2 c. vegetable oil
  • 1 c. sugar
  • 2 eggs
  • 3 bananas (peeled and mashed)
  • 1 3/4 c. flour
  • 1/2 t. salt
  • 1 t. vanilla
  • 3 T. boiling water
  • 1/2 c. nuts, pecans or walnuts (chopped)
  • 1 t. baking soda


  • Beat oil and sugar together. Mix in eggs and bananas. Stir in dry ingrediants. Add vanilla, boiling water, and chopped nuts. Pour into a greased and floured loaf pan. Bake at 350 degrees F. for 1 hour. Use a toothpick to check if done.


This is a great bread recipe for those old bananas, or ones you have tucked away in the freezer. Always better the next day! I usually double the recipe.
