- Cooking Time: 1 hour

- Preparation Time: 20 minutes
- 1/2 c. vegetable oil
- 1 c. sugar
- 2 eggs
- 3 bananas (peeled and mashed)
- 1 3/4 c. flour
- 1/2 t. salt
- 1 t. vanilla
- 3 T. boiling water
- 1/2 c. nuts, pecans or walnuts (chopped)
- 1 t. baking soda
- Beat oil and sugar together. Mix in eggs and bananas. Stir in dry ingrediants. Add vanilla, boiling water, and chopped nuts. Pour into a greased and floured loaf pan. Bake at 350 degrees F. for 1 hour. Use a toothpick to check if done.
NotesThis is a great bread recipe for those old bananas, or ones you have tucked away in the freezer. Always better the next day! I usually double the recipe.
