Banana Oat Bran Muffins
1 cup unbleached flour
3/4 cup oat bran
1/2 cup whole wheat flour
1 T. baking powder
1/2 t. salt
1-2 T. flax meal
1/2 cup (1 large) ripe mashed banana
1/3 cup oil
1 large egg, at room temperature
1/2 cup packed light brown sugar
2 T. unsulphured molasses
1/2 cup buttermilk
1/2 cup pecans
Preheat the oven to 400 degrees.
Arrange muffin cups in baking tin.
In medium bowl, stir together both flours, oat bran, baking powder & salt.
In a separate bowl, beat together remaining ingredients until well combined.
Make a well in the dry ingredients and stir in the liquids with a few deft strokes- do not beat.
Fold in the pecans with the last few strokes.
Bake for 8 minutes at 400 degrees, then reduce the heat to 375 degrees and cook for 9 minutes more. Allow muffins to cool for 5 minutes in the tin before serving. Spread with butter, yogurt or honey.
