Banana Oatmeal Breakfast Cookies
1/2 C peanut butter
1/2 C butter
3/4 C packed brown sugar
1 tsp vanilla
2 ripe bananas, mashed (1 cup)
1/2 tsp baking soda
1/4 tsp salt
3/4 C all purpose flour
3/4 C whole wheat flour
1/4 C wheat germ
2 C rolled oats
1 C dried cherries or raisins
Beat peanut butter and butter with electric mixer for 30 seconds.
Add brown sugar; beat until combined.
Beat in egg & vanilla until mixed.
Beat in bananas, soda, & salt. Mix in flours and wheat germ.
Stir in oats and cherries.
Drop by 1/4 cup measure onto ungreased cookie sheet.
Spread to 3" rounds.
Bake at 350° for 15-16 minutes or until edges are browned. Let stand 1 minute.
Remove; cool on wire rack.
Serve in 24 hours or freeze. Make 20 cookies.
