Banana Pecan Pancakes
1/2 cup plus 1 tablespoon flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
1/3 cup cornmeal
3/4 cup milk
1/3 cup pecans, chopped
Mix all ingredients in a blender or in a bowl with an electric mixer.
Cook on a hot griddle, using about 1/4 cup of batter per pancake.
Pairs Well With
These are more filling than plain pancakes but have the normal fluffiness and texture of pancakes. I cannot remember where the recipe came from, but I make frequently. You can use whatever nuts are handy (I tried almonds recently -- very tasty) and add blueberries or other fruit.
