- 1 banana
- 1/2 cup plus 1 tablespoon flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/3 cup cornmeal
- 3/4 cup milk
- 1 egg
- 1/3 cup pecans, chopped
- Mix all ingredients in a blender or in a bowl with an electric mixer.
- Cook on a hot griddle, using about 1/4 cup of batter per pancake.
NotesThese are more filling than plain pancakes but have the normal fluffiness and texture of pancakes. I cannot remember where the recipe came from, but I make frequently. You can use whatever nuts are handy (I tried almonds recently -- very tasty) and add blueberries or other fruit.
