Banana and Date Sandwich
1/2 cup orange juice
1-1/4 cups dates, pitted and chopped
1/2 cup walnut meats, chopped
8 slices cracked-wheat or white bread
2 small bananas, peeled and sliced 1/2-inch thick
Put 3 tablespoons of the orange juice, half the dates and half the walnuts in an electric blender. Cover and blend at high speed until the mixture is spreadable yet still lumpy. Transfer blended mixture into a small bowl and repeat with 3 more tablespoons of orange juice and the remaining dates and walnuts.
