My cousin Cheryl makes this banana bread, and I am not usually a nut fan, but the pecans in this one work, and I think they add a nice variation on the usual banana bread that I am used to.

The cinnamon sugar that I use at the very end is actually a spice island grinder that fresh grinds it right as you need it

  • 1/2 c butter
  • 1 c sugar
  • 2 eggs, beaten
  • 2 very ripe bananas, mashed
  • 1 T lemon juice
  • 2 C flour, sifted
  • 3 t baking powder
  • 1/2 c chopped pecans
  • 1/4 c whole pecans
  • Cinnamon sugar for dusting on top

  • Cream together butter and sugar
  • Add eggs, beating until mixture is fluffy
  • Stir in bananas and lemon juice
  • Add in flour and baking powder slowly, folding into wet ingredients
  • Add chopped pecans, fully incorporating
  • Pour into loaf pan
  • Sprinkle whole pecans on top and sprinkle a little cinnamon sugar over it
  • Bake at 350 degrees for 60 minutes
