Why I Love This Recipe

My cousin Cheryl makes this banana bread, and I am not usually a nut fan, but the pecans in this one work, and I think they add a nice variation on the usual banana bread that I am used to.

The cinnamon sugar that I use at the very end is actually a spice island grinder that fresh grinds it right as you need it

Ingredients You'll Need

1/2 c butter
1 c sugar
2 eggs, beaten
2 very ripe bananas, mashed
1 T lemon juice
2 C flour, sifted
3 t baking powder
1/2 c chopped pecans
1/4 c whole pecans
Cinnamon sugar for dusting on top

Directions

Cream together butter and sugar

Add eggs, beating until mixture is fluffy

Stir in bananas and lemon juice

Add in flour and baking powder slowly, folding into wet ingredients

Add chopped pecans, fully incorporating

Pour into loaf pan

Sprinkle whole pecans on top and sprinkle a little cinnamon sugar over it

Bake at 350 degrees for 60 minutes
