Bangers in Rum Sauce
1 lb Shannon sausages
1 1/2 - 2 oz. rum ( white or dark)
1 1/2 tablespoons dark brown sugar
Oil for pan
Cook sausage until lightly browned in a skillet with a little oil. Drain on paper towel. Slice sausage into three equal parts. Sprinkle sugar over rum and sausages making sure they are covered with liquid. Steep in rum and sugar for 2 hours. Cook in 350 degrees F oven for 15 - 20 minutes or until bubbling.
