Why I Love This Recipe

Ingredients You'll Need

1 lb boneless pork, cut into 1" cubes
1 egg, beaten
1/4 cup cornstarch
1/4 cup flour
1 1/4 cups chicken broth
oil for frying
1 medium onion, chopped large
1 large green pepper, chopped large
(or half red and half green pepper)
1/2 cup carrots, sliced diagonally
(pineapple chunks, if desired)
1 clove fresh garlic, crushed
2 Tbsp peanut oil
1/2 cup white wine vinegar
2 tsp soya sauce
2 Tbsp cornstarch


Directions

Trim pork and cube.


Whisk egg and add 1/4 cup cornstarch, flour, 1/4 cup chicken broth, and 1/2 tsp salt. Beat until smooth.


Pour oil into skillet until 1" deep. Heat to 375 degrees F.


Dip pork cubes into batter. Fry for 5-6 minutes or until golden. Drain and keep warm.


In separate pan, fry green pepper, carrot, and garlic in 2 Tbsp peanut oil until tender. Stir in 1 cup chicken broth, sugar, wine vinegar and soya. Boil rapidly for 1 minute.


Blend 1/4 cup cold water and 2 Tbsp cornstarch. Stir into veggies and cook until thickened.


Fold pork cubes into veggies and serve over rice.
