Why I Love This Recipe

My mom was the cookie baker of the family especially at Christmas! She did get alot of her recipes from my Great Grandma. For snowball cookies there were a few dif recipes this is one of them. They can be made in batches of each kind of nut, dried fruit or mix of them. Just make sure not to overbake them and double roll them in the powdered sugar! (they absorb some of the 1st roll in sugar) Also make sure all nuts are crushed to almost powder. Food processor works good for that. But can remember my mom putting nuts in zip lock bag then wrapping in a towel and beat'n the heck outta the bags w/ a hammer LOL

Ingredients You'll Need

1 Cup of butter/ Margarine (softened but not melted)
6 TBS sugar
2-3 tsp vanilla
*Optional 1/2 tsp almond or other extract
1/8- 1/4 tsp salt (or less)
2 cups AP Flour
2 cups crushed to a almost powder nuts (Walnuts, Pecans, Unsalted peanuts, Coconut or Almonds)
*Option: Can use diced dehydrated fruit (blueberries, cherries, dates, pineapple, raisins, craisins, cranberries, prunes, mango, papiyas, ect make sure to plump dehydrated fruit in apple or other juice in micro before using strain out juice into a cup after plumping and drink the juice Yumm!) or fresh diced tart apples
*or mix of crushed nuts and diced fruit to equal 2 cups
*or chopped mint chips, butterscotch chips, peanut butter or chocolate chips
*or spices like cardamom, cinnamon, nutmeg or allspice (only a pinch to 1/2 tsp of spice total)
Bowl of powdered sugar (big enough bowl to put all on cookie sheet in at once)
*OPT: chop some coconut in food processor and add to coating sugar


Add butter, sugar, vanilla and salt (if using spices add them here) mix w/ mixer

Stir in flour 'till well mixed

Stir in nuts and or other options to total 2 cups
Cover dough w/ plastic wrap and chill in fridge for 1-2 hours

Roll into balls

Place on ungreased cookie sheet

Bake at 350 'till just starting to brown (if you can catch them just before they brown is the best! Better to under cook than overcook this recipe! overcooked balls get dry or crack)

Take off cookie sheet and place in powdered sugar bowl and roll them around 'till well coated

Remove and put on a plate

Roll your balls for next batch and put in oven

Then take 1st batch and put back in powdered sugar bowl and roll around again (2nd coating stays on cookie better if they cool completely 1st)

Remove from bowl and set aside and get ready for next batch
