Ingredients You'll Need
1 cup barley
2 cups water
6 oz. currants
2 medium carrots diced
1 bunch parsley chopped
3 green onions sliced
1 teaspoon curry
1 teaspoon cinnamon powder
1 lemon juice
1/2 cup roasted sunflower seeds
dash of olive oil
salt to taste
Directions
Boil barley with water in pan, cover and reduce to simmer for 30 minutes or until barley is tender.
If it has water then drain barley, put in a bowl and let cool.
Add currants, carrots, parsley, green onions, curry, cinnamon, lemon juice, roasted sunflower seeds, oil and toss.
Salt to taste.
