Basic Banana Muffins
1 ½ cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
½ teaspoon salt
3 medium ripe bananas
1/3 cup vegetable oil
1 teaspoon vanilla extract
In a large bowl, combine dry ingredients.
In another bowl, mash the bananas; add dry ingredients just until moistened.
Fill greased or paper-lined muffin cups half full.
Bake at 375° for 18-22 minutes or until muffins test done.
Cool for 10 minutes; remove from pan to a wire rack to cool completely.
