Basic Bread and Rolls

Serves 25 | Prep Time | Cook Time


4 Tbsp. Yeast, dry active
3 cups warm water
1 cup dry powered milk
1/2 cup cooking oil
1 Tbsp. granulated sugar
1 tsp. salt
7 cups All Purpose Flour

In mixer bowl, combine yeast, sugar, oil, powered milk and warm water

Let proof for 10 minutes

Add 4 1/2 cups flour and begin mixing with dough hook on low speed

Add salt to dough and continue mixing until dough forms ball

If dough is loose, continue adding flour until dough forms ball

Turn out onto floured board, shape into a round and transfer to oiled bowl

Cover and allow to proof until double in size

Punch down the dough and let it rest for 10 minutes

Portion dough into rolls, loaves or desired shapes; place onto pans

Allow to proof until nearly doubled in size

Bake at 350 until light golden brown
