BAY POLENTA

Ingredients

  • 2 cups chicken broth
  • 4 tbsp unsalted butter
  • 1/2 bay leaf
  • 2 cups yellow cornmeal
  • salt and pepper

Directions

  • In a large saucepan bring 2 cups water, chicken broth, butter, and bay leaf to a boil.
  • In a thin, steady stream, stir in cornmeal
  • Stir constantly until mixture thickens and is smooth, not grainy, about 25 minutes.
  • Season with salt and pepper to taste.
