Beans & Mushrooms Amandine
1 Tb. finely chopped chives or green onions
2 Tb. butter
2 tsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. light cream, half-and-half or undiluted evaporated milk
1 (1 lb.) can green beans
1 (3-4 oz.) can mushrooms, drained
2 Tb. toasted slivered almonds
Cook chives in butter a few min. Add flour, salt and pepper, stirring 'til smooth. Add cream and 1/4 c. liquid from beans. Cook 'til thickened, stirring constantly.
Add drained beans and mushrooms and heat. Serve sprinkled with almonds.
