500g strong bread flour
10g easy action yeast
10g sea salt
300ml hand hot water
Preheat the oven to 210C/Gas mk 5
Mix all the ingredients together in a large bowl and knead until the dough is smooth and silky and bounces back to the touch.
Place back in the bowl, cover and leave to rise for 1-2 hours.
Gently (don't knock all the air out of it) shape and place on a greased baking tray.
Leave for about 20 minutes to rise, dust with flour, slash the top and bake for 35 minutes.
Leave to cool for 10 minutes before eating!
You can use this recipe to make rolls and flatbreads. Replace the butter with 3 tbs olive oil for 4 pizza bases.
