3 tablespoons Kosher salt
2 tablespoons fresh ground pepper
2 teaspoons garlic powder
Mix spices and set aside. Slice beef into thin slices (about 1/8" thick) In a 9 x 13" pan; sprinkle some seasoning and lay slices of beef on top, lightly sprinkle more seasoning over top and layer again until all beef is covered in seasoning. Cover with plastic wrap and refrigerate for about 48 hours. Lay beef on racks and bake in 110 degree oven (may need to keep the oven door open) for approximately 5-6 hours. The idea is to dehydrate NOT COOK the meat.
