Beef Pesto Panini

Serves 4 servings | Prep Time | Cook Time

Ingredients

8 slices italian bread -- 1/2 inch thick
2 tablespoons margarine -- softened (or butter)
1/2 pound thinly sliced cooked deli roast beef
4 tablespoons basil pesto
4 1 ounce slices mozzarella cheese
spaghetti sauce -- warmed, if desired


Spread 1 side of each bread slice with margarine. Place 4 bread slices margarine sides down; top with beef, pesto and cheese. Top with remaining bread slices, margarine sides up.



Cook sandwiches in 12-inch skillet or on grill pan over medium heat 4 to 5 minutes, turning once, until bread is crisp and cheese is melted. Serve with spaghetti sauce.



SUBSTITUTION: Use thinly sliced cooked deli chicken instead of the roast beef
