BEEF STEW WITH BEETS
Beef Stew with Beets
Adapted this from a few recipes I found on line.

- 1 lb grass fed stewing beef or rib steaks
- 1/2 large sweet onion - diced
- 2 cloves of garlic - minced
- 3 - 4 carrots - sliced
- 4 golden beets, cleaned, peeled and cut into chunks
- 2 large potatoes - peeled and cut into chunks
- 2 celery stalks - sliced (I usually use fennel for extra flavor)
- 2 cups of beef broth
- 1 cup apple juice or cider
- 1 cup tomato juice (can use tomato sauce or can of diced tomatos)
- 1/4 tsp thyme
- 1/4 tsp rosemary
- Salt and pepper to taste
DIRECTIONS
Preheat oven to 275 deg.
Brown meat in skillet or dutch oven
Add onion and garlic and stir for 2 minutes or so to soften
Tranfer to roasting pan if using skillet to brown
Add rest of ingredients
Cover with foil or lid and bake at 275 for 3 - 3.5 hours - low and slow
