Beef Taco’s

Serves | Prep Time | Cook Time


 1 lb. ground beef
 1 tbsp olive oil
 ½ diced red onion
 ½ diced green pepper
 ½ diced red pepper
 1 cup diced mushrooms
 1 package of taco seasoning with some water
 2 minced garlic cloves
 2 cups shredded lettuce
 1 cup grated cheese
 1 cup diced tomatoes
 1 cup sour cream
 1 package taco shells, hard or soft

First, sauté the beef with the onions and the garlic. Cook thoroughly and then set aside in a bowl on the stove. Sauté mushrooms and peppers in olive oil. When veggies are limp return beef to pan and add seasonings. Simmer for 15-20 minutes. While simmering put lettuce, cheese, tomatoes and sour cream in separate bowls and serve on the side. Warm the tortillas on a plate in the microwave.

 Make it Healthier:

✔ Use extra lean ground beef

✔ Use mixed greens instead of ice burg lettuce.

✔ Use low-fat cheese and sour cream

✔ Instead of using flour tortillas, use multi-grain corn tortillas crumbled up and make a salad instead of taco’s
