Beef Zucchini Casserole
2 Tblsp. butter
1 med. onion, chopped
1/4 c. Parmesan cheese
1-1/2 lbs. ground beef
4 c. sliced zucchini (about 3 med.)
1 Tblsp. flour
1/2 tsp. salt
2/3 c. ketchup
1/4 c. shredded cheddar/jack cheese
or cheese of your choice
In a large skillet heat butter; add zucchini and onion.
Cook until onion is tender.
Pour into baking dish 10x 6 x 1-1/2 inch.
Sprinkle with parmesan cheese.
In same skillet, brown ground beef; drain grease.
Stir in flour, salt, pepper and then ketchup into the meat.
Spoon meat mixture evenly over zucchini. Cover and bake in a 350 degree oven for 20 minutes.
Remove cover and top with shredded cheese; bake uncovered 5 minutes longer, or until cheese has melted
