Beef and Barley Soup
1 clove garlic, minced
1/2 tsp. salt
1 cup water
1 lb. beef, cut into 3/4" cubes
1 small onion, diced
1 stalk celery, diced
1 14 oz. can diced tomatoes w/ juice
5 mushrooms, sliced
2 tsp. beef boullion
2 bay leaves
1/2 tsp. basil
1/2 cup pearl barley
1. Brown beef cubes in olive oil in a large pan.
2. Add onion and garlic, cook on medium to soften onion.
3. Add celery, carrots, tomatoes, mushrooms, water, boullion, bay leaves, basil, and salt. Bring to boil, thenn simmer 2 hours.
4. Rinse barley and add to pot with water. Simmer another 1-1 1/2 hours.
