BEEF AND BEER STEW

Ingredients

  • 1\3 C salt pork or bacon
  • 2 1/2 -3 lbs stew meat
  • 3 lg onion
  • 3T paprika
  • 1T salt
  • 1t ground nutmeg
  • 1t dried marjoram
  • 1 C water
  • 6oz tomato paste
  • 1T Worcestershire sauce
  • 4 lg potatoes, cubed
  • 6 carrots, thinly sliced
  • 24 oz beer

Directions

  • Cook salt pork in large stew pot until rendered
  • Add meat: cook and stir over medium heat until browned
  • Remove meat
  • Reduce heat to medium and add onion. Cook until tender
  • Return meat, add seasonings, beer, water, tomato paste amd Worcestershire. Stir to mix
  • Cover and simmer until tender. About 1 1/2 hours
  • Add prepared vegetables, cover and simmer until vegetables ate cooked. About 45 minutes.
