Beef and Broccoli
1 lb. top round steak sliced very thin
2 TBS cornstarch
1 can beef broth
1 TBS brown sugar
1 TBS soy sauce
1/4 tsp Garlic powder
1/4 tsp ground ginger
4 cups broccoli flowerets
4 cups cooked rice, or noodles
Slice beef into very thin strips. Mix cornstarch, 1 cup broth, sugar and soy sauce.
Spray skillet with vegetable cooking spray and heat 1 minute. Add beef and stir-fry until browned and juices evaporate. Remove beef.
Add remaining broth, garlic, ginger and broccoli. Heat to a boil. Cover and cook over low heat 5 minutes until broccoli is tender-
Add cornstarch mixture. Cook until mixture boils and thickens, stirring. Return beef to skillet and heat through. Serve over rice.
