Ingredients You'll Need

Beef and Broccoli Skillet Casserole
1 lb eye of round steak or roast cut into 1/2" cubes
1 lb bag of frozen broccoli florets, cut into 1" pieces
3 cups hot water
1 envelope onion soup mix, dry
3 cups instant rice
3/4 cup fat-free French salad dressing


Cook beef on high for 3-4 minutes or until bottom cooked.

Turn beef over and pour broccoli, water and soup mix onver beef. Stir until soup mix is dissolved.

Cover and cook on high for 6 minutes.

Add rice and stir until rice covered by liquid.

turn off heat, cover, and let sit for 5 minutes.

Sitr in dressing.

Serve with light soy sauce if desired.
